Chicken Pot Pie is yummy comfort food I think of during November when the leaves fall and the weather cools down. My sister shared this awesome recipe with me for chicken pot pie – – lightened up and dairy free!

Make it gluten free: Substitute gluten free flour blend for the flour
Tips: To save time, substitute a frozen pre-made crust for the top (regular or gluten free/dairy free crust), shred a precooked rotisserie chicken, double the sauce recipe if you like a creamier pot pie.
